Faith is an incredibly useful tool for a thief, it can heal him/her, calm others, assist your escaping and all sorts of other things. You can with some time and effort, have rituals and faith items at your fingertips.

Thieves who worship a deity have limited access to faith rituals. You can use whichever rituals the deity you choose offers you.

Keeping in alignment is always a problem, even for priests. Praying is based on your skill in fa.ri.sp so unless you advance that a fair bit, praying will end up just TMing fa.po for you, which is nice anyway. You can keep in alignment by attacking NPCs which keep you in the right align, i.e if you're a sekkite, attack good things to keep evil. Rituals really shouldn't be considered a last resort, but more of a way to conserve supplies when there's no pressure on.

If you want to RP, then go for it. But for those who would prefer a useful deity over RP type bits, I'd go for Gufnork with cure light wounds, it's a classic follower ritual and very handy. Second to Gufnork, possibly Gapp if you prefer to dodge with low burden, Sek if you don't like light sources, Hat for the same or maybe Fish if you like the ability to evade enemies by hiding underwater.

Faith items, like rituals provide thieves with a few more interesting options for combat and stealing. Here are some of the rituals that you'll be able to cast with the help of a faith rod.

Detect Alignment: Allows you to see the alignment of someone you target with the rod.
Stasis: Encases a target (or yourself) in a crystalline sphere for a few minutes.
Cure Medium Wounds: Heals you or someone else.
Bless: Adds 1 to all stats temporarily.
Dust Devil: Summons a whirlwind of dust to protect you, they will remain with you until they die or leave.
Minor Shield: Raises a fairly powerful shield around you, this lasts about six minutes.
Fear: Causes targets to run away!

Other items include prayer beads, which will give upto +2 bonus to Wisdom when held. They can take some serious time to charge up though. To charge them just hold them while performing a ritual or praying.

Faith rods are merely small mace type and larger polearm-type weapons that have religous etchings and symbols on them. Priests may consecrate these rods and then 'bestow' rituals directly onto the etchings and symbols.

There are three levels of charge that faith rods can have. The first level is 'imbued'. This means that any member of the faith (even followers) may perform that ritual from the rod. However, after one use, the ritual is used up. The second level is 'impressed'. Any member of the faith may use the ritual, and the ritual is not used up. The final level of charge is 'imprinted'. Any priest of a different faith may reconsecrate the rod to their religion, and the ritual will remain on the rod. However, it will lose all of it's charged, going back to 'imbued', and will need to be charged by a priest again in order to get more than one use out of it. (This is how a Sekkian priest/follower can use Security Blanket, for instance.)

Any ritual may be bestowed, although larger rituals take significantly longer to charge. These are quite expensive, and expect to pay a good sum of royals if you don't have really good priest connections. Aside from having the faith rod, you'll also need any components the priest would normally use to perform the ritual, whether it be holy symbols, a specific prayer written in a prayer book, or something consumable.

Using rituals from faith rods drains the deity pool. The deity pool is a special resevoir of points that the god allocates to his followers. It is filled whenever a priest of that god prays, little by little. Abusing your faith rods by using them often will drain the pool for not only yourself, but everyone else in your religion.
